This vanilla bean cookie is flavored with almond extract and espresso powder, scattered with chocolate covered espresso bits. The squishcore is a mascarpone buttercream and topped with cocoa powder and a cluster of chocolate covered espresso bits. Bold and sweet, a fancy af adult cookie.
